New Animes to watch ?

My girlfriend and I both like watching animes, and I tend to prefer good animes to stuff like Dexter, Battlestar Galactica and the like.
I haven't really been following new animes though, so I was wondering if any of you had good suggestions.
For what we like to watch, it has to have some action, or I'm gonna get bored. Examples of stuff I really like :
Hajime No Ippo (my personal favorite) Berserk Trigun Ghost in the shell Cowboy Bebop Naruto Bleach One Piece
My gf can watch pretty much anything... she was watching one lately where some girl became a knight, so there was lots of swordfighting and battles and a bunch of humoristic stuff. She also watches animes about people allergic to cats and other cute stuff. I'm willing to watch a bit of that, but It has to have something more than cute cats.
I'm sure there are lots of new series that are interesting, but I haven't kept up with animes.
Any suggestions are welcome!

Thanks a lot, I'll look those up,
I saw Hellsing (the first season anyway, if they ever managed to follow up to it) and Samurai Champloo, which I both liked.
I'll check the others out.

I'm no expert, and I'm fairly picky when it comes to watching anime, but there are a few I've liked that you might enjoy. Maybe they're old news to you guys, but here goes.
Gurren Lagan (did I spell that right?) - It's basically giant robot fights, but it's completely self-aware of how ridiculous giant robot fights are. Fluid animation and good characters with a pretty unique style.
FLCL - Made by the same people I think. I can't describe this one, but it's pure awesome.
Avatar: The last Airbender - I know, this isn't anime. If my best friend hadn't insisted that I watch it, I would have dismissed it as a kid's cartoon. The animation is really good (especially as it gets into the second season) and the story is genuinely epic.
